Nasi Bokhari Istimewa (Special Bokhari Rice)

Ingredients (serves 4)

  1. 1 packet of Perencah Nasi Bokhari (Bokhari Rice Spice)
  2. 4 cups of basmati rice
  3. 5 cups of water
  4. 600g of beef (cut into 3 or 4 inches)
  5. 5 tablespoon of ghee or butter
  6. 4 pcs of green chillies
  7. 3 pcs of tomatoes (diced)
  8. 3 pcs of curry leaves
  9. 2 inches of cinnamon
  10. few pcs of cloves
  11. few pcs of cardamon
  12. Pandan leaves (washed & tied into a knot)
  13. Mint (Pudina) leaves
fine slice
  1. 10 pcs of shallots
  2. 5 cloves of garlic
  3. 1 inch of ginger

Cooking Method

  1. Wash and drain rice.
  2. Heat ghee or butter, then fry sliced shallots, garlic, ginger, cinnamon, cloves, cardamon and curry leaves and fry until golden brown.
  3. Add beef, green chillies, tomatoes and Bokhari Rice Spice and cook until tender.
  4. Add water and bring to boil.
  5. Add rice, pandan & pudina leaves and cook rice as normal - slow flame.
  6. While waiting for rice to cook, prepare Air Asam (Asam Sauce)
Recipe for Air Asam (Asam Sauce)
  1. 2 pcs of Tomatoes
  2. 1/2 teaspoon of Belacan (Shrimp Paste)
  3. 1 pc big Onion
  4. 2 pcs of Cili Padi (Small Red Chillies) - increase quantity according to your liking
  5. 3 pcs of Red Chillies - increase quantity according to your liking
  6. Lime Juice - extracted from 1/2 lime or Tamarind Juice
  7. 1 tablespoon of Oyster Sauce
  8. Salts and sugar
    fine slice the above and mix together and allow to rest.
Bon Appetit
Dip the beef with the Asam Sauce and enjoy your meal.

Sup Soto Istimewa (Special Soto Soup)

Ingredients (serves 4)

  1. 1 packet of Perencah Sup Soto(Soto Soup Spice)
  2. 1 ea red tomato - diced
  3. 2 inches of cinnamon
  4. few pcs of cloves
  5. few pcs of cardamon
  6. 1 .5 litres of water
  7. 1/2 chicken

pound

  1. 4 pcs of shallots
  2. 3 cloves of garlic
  3. 1 inch of ginger

Cooking Method

  1. Heat cooking oil and fry pounded shallots, garlic and ginger with cinnamon, cloves & cardamon until golden brown.
  2. Add diced tomato and 1 packet of Soto Soup Spice.
  3. Add water, chicken and salt. Bring to boil and wait until chicken is cooked.
  4. Take the chicken out, separate flesh from bones and shred to fine pieces as one of the condiments.

Prepare condiments as shown in the picture below:-

  1. Sambal Kicap (small hot chillies & a few cloves of garlic blended in sweet soy sauce)
  2. Fried shallots
  3. Limes - cut to few pieces
  4. Red & green chillies - fine sliced
  5. 2 or 3 hard boiled eggs - peeled and cut
  6. 100g of bean sprout - blanched
  7. Fried tauhu (bean curd)
  8. Daun Sup/Saderi (Malaysian celery) - fine sliced
  9. Spring onion - fine sliced
  10. Shredded chicken
  11. 1 packet of Nasi Impit (packed rice boiled in water until compressed) or/with
  12. Bihun or Mee Kuning (Rice Vermicelli or Yellow Noodle)

Bon Appetit
Put noodle or/with compressed rice into a bowl, add condiments, hot & sweet soy sauce to own liking, pour the hot soto soup and enjoy. Warning for those new to spices - the cinnamon, cardamon & cloves are included in the recipe to enhance the flavour. Therefore it is advisable to remove them before serving otherwise you may experience uneasy taste even in a single bite.

Nasi Tomato (Tomato Rice)


Ingredients (serves 4)

  1. 1 packet of Perencah Nasi Tomato (Tomato Rice Spice)
  2. 4 cups of rice
  3. 5 cups of water
  4. 5 tablespoon of ghee or butter
  5. 3 pcs of tomatoes (diced)
  6. 2 inches of cinnamon
  7. few pcs of cloves
  8. few pcs of cardamon
  9. 6 inches of pandan leaves - tie into knot
  10. 5 pcs of mint leaves
  11. Fried shallots and spring onion for decoration

fine slice

  1. 8 pcs of shallots
  2. 4 cloves of garlic
  3. 1 inch of ginger

Cooking Method

  1. Wash and drain rice.
  2. Heat ghee or butter, then fry sliced shallots, garlic, ginger, cinnamon, cloves and cardamon until golden brown.
  3. Mix all the spices from Tomato Rice Spice, fry together with diced tomatoes.
  4. Add water and bring to boil.
  5. Add rice, pandan leaves and mint leaves and cook rice as normal - slow flame.
  6. Not necessary to add sugar or salt if the above recipe is followed.
  7. Once cooked, sprinkle fried shallots and spring onion.

Bon Appetit

Normally served with other dishes (cook separately) like chicken/beef curry, ayam/daging masak merah (beef/chicken red chilli sauce), acar timun (pickle cucumber). Nasi Daging Istimewa (Malay style rice cooked with beef)

Ingredients (serves 4)
  1. 1 packet of Perencah Nasi Daging (Beef Rice Spice)
  2. 4 cups of rice
  3. 5 cups of water
  4. 600g of beef (cut into 3 or 4 inches)
  5. 5 tablespoon of ghee or butter
  6. 3 pcs of green chillies
  7. 5 pcs of tomatoes (diced)
  8. 3 pcs of curry leaves
  9. 2 inches of cinnamon
  10. few pcs of cloves
  11. few pcs of cardamon
  12. 1 stalk of lemon grass (crushed)
fine slice
  1. 10 pcs of shallots
  2. 5 cloves of garlic
  3. 2 inches of ginger

Cooking Method

  1. Wash and drain rice.
  2. Heat ghee or butter, then fry sliced shallots, garlic, ginger, cinnamon, cloves, cardamon and curry leaves and fry until golden brown.
  3. Add beef, green chillies, tomatoes and Beef Rice Spice and cook until tender.
