- 1 packet of Perencah Nasi Bokhari (Bokhari Rice Spice)
- 4 cups of basmati rice
- 5 cups of water
- 600g of beef (cut into 3 or 4 inches)
- 5 tablespoon of ghee or butter
- 4 pcs of green chillies
- 3 pcs of tomatoes (diced)
- 3 pcs of curry leaves
- 2 inches of cinnamon
- few pcs of cloves
- few pcs of cardamon
- Pandan leaves (washed & tied into a knot)
- Mint (Pudina) leaves
fine slice
- 10 pcs of shallots
- 5 cloves of garlic
- 1 inch of ginger
Cooking Method
- Wash and drain rice.
- Heat ghee or butter, then fry sliced shallots, garlic, ginger, cinnamon, cloves, cardamon and curry leaves and fry until golden brown.
- Add beef, green chillies, tomatoes and Bokhari Rice Spice and cook until tender.
- Add water and bring to boil.
- Add rice, pandan & pudina leaves and cook rice as normal - slow flame.
- While waiting for rice to cook, prepare Air Asam (Asam Sauce)
Recipe for Air Asam (Asam Sauce)
- 2 pcs of Tomatoes
- 1/2 teaspoon of Belacan (Shrimp Paste)
- 1 pc big Onion
- 2 pcs of Cili Padi (Small Red Chillies) - increase quantity according to your liking
- 3 pcs of Red Chillies - increase quantity according to your liking
- Lime Juice - extracted from 1/2 lime or Tamarind Juice
- 1 tablespoon of Oyster Sauce
- Salts and sugar
fine slice the above and mix together and allow to rest.
